The original term was ‘sumeshi’, shortened to the word ‘sushi’ but still referring to the same meaning; special rice seasoned in selected vinegar. The actual high-grade rice is white, short-grain and having a high level of starch. No ordinary rice will do, you can rely on our expertise.
